Method

  1. Step 1. Heat the oil in a non-stick pan and cook the mushrooms over medium-high heat until browned.
  2. Step 2. Add the spinach and stir until just wilted.
  3. Step 3. Beat the eggs, pour into the pan and scramble gently until fully set with no runny parts.
  4. Step 4. Warm the tortillas, fill with the egg mixture and cheese, roll up and serve hot.
