Method

  1. Step 1. Soften the onions and peppers in a large pot for 8 minutes.
  2. Step 2. Stir in the spices, then add all the beans and the tomatoes.
  3. Step 3. Simmer, partly covered, for 30 minutes, stirring occasionally.
  4. Step 4. Season with pepper and serve with rice, or cool and portion for the freezer.
