The filling of a melktert, baked in small ramekins without the pastry. Fully cooked, made with pasteurised milk and dusted with cinnamon — a small pudding that also adds some calcium and protein to the day.

Method

  1. Step 1. Heat the oven to 160°C.
  2. Step 2. Warm the milk with the cinnamon stick until steaming, then remove the stick.
  3. Step 3. Whisk the eggs, sugar, flour and vanilla together, then pour the warm milk in slowly while whisking.
  4. Step 4. Strain into four ramekins and place them in a roasting tin. Pour hot water into the tin to come halfway up the sides.
  5. Step 5. Bake for 30–35 minutes until just set with only a slight wobble in the centre and no liquid egg remaining.
  6. Step 6. Cool, dust with ground cinnamon and chill before serving.
