Method

  1. Step 1. Mix the flour, yeast, sugar and salt, then add the water and 1 tablespoon of oil to make a soft dough.
  2. Step 2. Knead for 8 minutes, cover and leave to rise for about an hour until doubled.
  3. Step 3. Shape into 8 balls, place on a lined tray, cover and rest for 20 minutes. Heat the oven to 200°C.
  4. Step 4. Bake for 22–28 minutes until golden and hollow-sounding when tapped.
  5. Step 5. Meanwhile heat the remaining oil, soften the onion, add the garlic and curry powder, then the tomatoes and beans. Simmer for 15 minutes and season with pepper.
  6. Step 6. Split the warm vetkoek and spoon the bean filling inside.
