Beef frikkadels in tomato sauce

Frikkadels — South African meatballs — browned and then simmered in a tomato and onion sauce. Some households bake them plain, others serve them in gravy; this version uses tomato so it goes further with pap or rice.

Method

  1. Step 1. Mix the mince with the grated onion, garlic, soaked bread, egg, coriander and black pepper.
  2. Step 2. Shape into 16 balls with wet hands.
  3. Step 3. Heat the oil in a wide pan and brown the frikkadels on all sides, then lift them out.
  4. Step 4. Soften the chopped onion in the same pan for 6 minutes, then add the tomatoes, tomato paste and herbs and simmer for 5 minutes.
  5. Step 5. Return the frikkadels, cover and simmer gently for 20 minutes, turning once.
  6. Step 6. Cut one open to check there is no pink meat left, then scatter with parsley and serve with pap, samp or rice.
