Method

  1. Step 1. Mix the curry powder, vinegar, jam, garlic and 1 tablespoon of oil, toss the beef through it and refrigerate for at least 2 hours.
  2. Step 2. Heat the oven to 200°C, toss the butternut and carrot in the remaining oil and roast for 30–35 minutes.
  3. Step 3. Thread the beef onto skewers with apricots, onion and pepper.
  4. Step 4. Grill or braai for 15–18 minutes, turning often, until the beef is cooked right through with no pink centre.
  5. Step 5. Serve the sosaties with the roasted vegetables.
