Method

  1. Step 1. Cook the soaked samp in unsalted boiling water until soft, about 50–60 minutes, then drain.
  2. Step 2. Heat the oil and soften the onion and garlic for 5 minutes.
  3. Step 3. Add the mince and cook, breaking it up, until browned all over with no pink meat left.
  4. Step 4. Add the tomatoes and simmer for 15 minutes.
  5. Step 5. Stir in the spinach and cook for 8–10 minutes until fully cooked and the mince is piping hot throughout.
  6. Step 6. Season with black pepper and serve with the samp.
