Method

  1. Step 1. Brush all the vegetables lightly with oil.
  2. Step 2. Cook them over medium coals or on a hot griddle pan, turning, until soft and lightly charred — about 8 minutes for the marrow and peppers, 15 for the butternut.
  3. Step 3. Cut the cooked vegetables into bite-sized pieces and put them in a large bowl.
  4. Step 4. Add the chickpeas, lemon juice, remaining oil, parsley and black pepper and toss while still warm.
  5. Step 5. Serve warm or at room temperature the same day.
