Method

  1. Step 1. Soften the onion and green pepper in the oil for 10 minutes.
  2. Step 2. Add the garlic and paprika for a minute, then the tomatoes and tomato paste.
  3. Step 3. Pour in the stock and simmer for 10 minutes until the sauce reduces.
  4. Step 4. Add the butter beans and heat right through for 8 minutes, stirring gently so they stay whole.
  5. Step 5. Season with black pepper and serve with brown bread, pap or rice.
