Method

  1. Step 1. Soften the onions in the oil for 10 minutes until golden.
  2. Step 2. Stir in the garlic, ginger, masala, turmeric, cinnamon and cardamom and cook for 1 minute.
  3. Step 3. Add the tomatoes and cook for 5 minutes, then add the chickpeas and water.
  4. Step 4. Simmer uncovered for 15 minutes until the sauce thickens, mashing a few chickpeas against the side of the pot to help it along.
  5. Step 5. Remove the cardamom pods, scatter with coriander and serve.
