Method

  1. Step 1. Poach or grill the chicken until cooked right through with no pink meat and the juices run clear, about 12–15 minutes. Cool it quickly.
  2. Step 2. Mix the beans, tomato, cucumber and onion in a bowl.
  3. Step 3. Whisk the lemon juice, olive oil and black pepper and stir through the salad.
  4. Step 4. Slice the cooled chicken and pack it on top in a clean sealed container.
  5. Step 5. Refrigerate until you leave and carry it in a cool bag.
