Chicken bredie with vegetables

A bredie is a slow-cooked stew in which the onions cook down into the sauce. Versions differ from home to home; this one uses skinless chicken with carrots, potato and green beans so the pot carries plenty of vegetables.

Method

  1. Step 1. Heat the oil in a heavy pot and brown the chicken pieces on all sides, then set them aside.
  2. Step 2. Add the onions and cook slowly for 12–15 minutes until soft and sweet — this is what gives a bredie its body.
  3. Step 3. Stir in the garlic, coriander and cinnamon for a minute, then add the tomatoes and stock.
  4. Step 4. Return the chicken, cover and simmer gently for 30 minutes.
  5. Step 5. Add the carrots and potato and cook for 20 minutes, then add the green beans for a final 10 minutes.
  6. Step 6. Check the chicken is cooked through with no pink meat, season with black pepper and serve with rice or pap.
