Method

  1. Step 1. Mix the chicken with the yoghurt, masala, garlic and ginger and refrigerate for at least an hour.
  2. Step 2. Fry the onions in the oil until deep golden, then lift out half for the topping.
  3. Step 3. Add the cinnamon, tomatoes, potato and carrot to the pot with a splash of water and cook for 10 minutes.
  4. Step 4. Add the marinated chicken, cover and simmer for 25 minutes.
  5. Step 5. Parboil the rice with the turmeric for 6 minutes, drain, and spread it over the chicken.
  6. Step 6. Cover tightly and steam on a very low heat for 25 minutes.
  7. Step 7. Check the chicken is cooked through with clear juices and no pink meat, then top with the reserved onions and coriander.
