Method

  1. Step 1. Boil the soaked samp and beans in the water for about 45 minutes, until beginning to soften. Top up the water if needed.
  2. Step 2. Meanwhile heat the oil in a second pan and brown the chicken on all sides.
  3. Step 3. Add the onion, carrot and garlic to the chicken and cook for 8 minutes, then stir in the tomatoes.
  4. Step 4. Tip the chicken mixture into the samp pot and simmer together for 25–30 minutes.
  5. Step 5. Check the chicken is cooked right through, with no pink meat and clear juices, then season with black pepper and serve.
