Method

  1. Step 1. Mix the flour, yeast, salt, sugar and water into a soft dough, knead for 8 minutes and leave to rise for an hour.
  2. Step 2. Shape the dough, place it in a greased heatproof bowl, cover and steam over simmering water for 50–60 minutes until firm and cooked through.
  3. Step 3. Meanwhile brown the chicken in the oil, add the onions and cook for 8 minutes.
  4. Step 4. Add the tomatoes, stock and carrots, cover and simmer for 25 minutes, adding the green beans for the last 10 minutes.
  5. Step 5. Check the chicken is cooked through with clear juices, season with pepper and serve wedges of dombolo alongside.
