Durban bean bunny chow

A vegetarian bunny chow: Durban-style sugar bean curry served in a hollowed quarter loaf. Traditionally made with mutton or beans and eaten with the hands, it is street food from Durban's Indian South African community. This version uses a wholewheat loaf and plenty of beans.

Method

  1. Step 1. Heat the oil and cook the onions for 8 minutes until soft.
  2. Step 2. Add the garlic, ginger, masala and curry leaves and stir for a minute.
  3. Step 3. Add the tomatoes, potato and water, cover and simmer for 15 minutes until the potato is nearly soft.
  4. Step 4. Add the beans and simmer uncovered for 10 minutes until thick.
  5. Step 5. Hollow out each bread quarter, keeping the removed bread as a lid.
  6. Step 6. Spoon the hot curry into the bread, top with coriander and serve with grated carrot salad and the bread lid for dipping.
