Method

  1. Step 1. Fry the onion, curry leaves and cinnamon stick in the oil for 10 minutes until deep golden.
  2. Step 2. Add the garlic, ginger, masala and turmeric and cook for a minute, adding a splash of water so the spices do not catch.
  3. Step 3. Stir in the tomato and cook for 8 minutes until the oil separates slightly.
  4. Step 4. Add the chicken, turn it in the sauce, pour in the water, cover and simmer for 20 minutes.
  5. Step 5. Add the potato and cook for a further 20 minutes until both the potato and chicken are tender.
  6. Step 6. Check the chicken is cooked right through with no pink meat and clear juices, remove the cinnamon stick, then scatter with coriander.
