Method

  1. Step 1. Soften the onion in the oil for 5 minutes, then add the tomato and cook for 3 minutes.
  2. Step 2. Stir in the beans and heat until bubbling.
  3. Step 3. Make four hollows and crack in the eggs. Cover the pan and cook for 5–7 minutes.
  4. Step 4. Cook until both the white and the yolk are firm, then scatter with spring onion and black pepper.
  5. Step 5. Serve with brown bread or leftover pap.
