Method

  1. Step 1. Cook the onion slowly in the oil for 10 minutes until soft and golden.
  2. Step 2. Add the garlic, tomatoes and tomato paste and cook for 8 minutes until saucy.
  3. Step 3. Add the washed morogo with the water, cover and cook for 8–10 minutes until wilted and tender.
  4. Step 4. Stir in the beans and heat right through for 5 minutes.
  5. Step 5. Season with black pepper and finish with a squeeze of lemon.
