Method

  1. Step 1. Heat the oil and cook the onions for 8 minutes until soft.
  2. Step 2. Add the garlic, curry powder and curry leaves and stir for a minute.
  3. Step 3. Add the tomatoes and diced potato with a splash of water, cover and simmer for 12 minutes until the potato is tender.
  4. Step 4. Add the pilchards with their sauce, breaking them into large pieces, and heat through for 5 minutes.
  5. Step 5. Serve over cooked rice with fresh coriander.
