Method

  1. Step 1. Soften the onion in the oil for 8 minutes, then add the garlic for a minute.
  2. Step 2. Add the tomatoes and cinnamon and cook for 5 minutes.
  3. Step 3. Add the pumpkin and stock, cover and simmer for 20 minutes until tender.
  4. Step 4. Stir in the beans and heat right through for 5 minutes.
  5. Step 5. Season with black pepper, scatter with parsley and serve with pap, samp or brown bread.
