Roosterkoek with bean and avocado filling

Roosterkoek are bread rolls cooked straight on the braai grid over coals. Filled with mashed sugar beans, avocado and tomato instead of butter and jam, they make a filling lunch. They can also be cooked in a heavy pan on the stove.

Method

  1. Step 1. Mix the flour, yeast and salt. Add the oil and water and mix to a soft dough.
  2. Step 2. Knead for 8 minutes, cover and leave in a warm place for about an hour until doubled.
  3. Step 3. Knock the dough back and shape into 6 flat round rolls. Rest for 15 minutes.
  4. Step 4. Cook on a grid over medium coals, or in a heavy dry pan on medium-low heat, for about 8–10 minutes a side until browned and cooked through — they sound hollow when tapped.
  5. Step 5. Mash the beans roughly with the lemon juice and black pepper.
  6. Step 6. Split the warm roosterkoek, spread with the bean mash and fill with sliced avocado and tomato.
