Method

  1. Step 1. Brown the chicken in the oil, then set aside.
  2. Step 2. Soften the onions for 8 minutes, add the garlic, tomatoes and tomato paste and cook down for 10 minutes.
  3. Step 3. Return the chicken with the stock, cover and simmer for 25 minutes until cooked through with no pink meat.
  4. Step 4. For the pap, bring the water to the boil, whisk in the maize meal, then cover and cook on a low heat for 25 minutes, stirring every few minutes.
  5. Step 5. Wash the morogo well and cook it in a covered pan with a splash of water for 8 minutes.
  6. Step 6. Serve the pap with the chicken sishebo spooned over and the greens on the side.
