Method

  1. Step 1. Boil the soaked beans in fresh water for 45–55 minutes until soft, then drain.
  2. Step 2. Heat the oil and cook the onions for 8 minutes, then add the garlic, ginger, masala and turmeric for a minute.
  3. Step 3. Add the tomatoes and water and simmer for 10 minutes until thickened.
  4. Step 4. Stir in the cooked beans and simmer for another 10 minutes.
  5. Step 5. Cook the brown rice according to the packet and serve the curry over it with coriander.
