Method

  1. Step 1. Soften the onion in the oil for 8 minutes, then stir in the garlic and ginger for a minute.
  2. Step 2. Add the tomatoes and cook for 5 minutes until they darken slightly.
  3. Step 3. Stir the peanut butter into a little of the stock to loosen it, then add it to the pot with the rest of the stock.
  4. Step 4. Add the sweet potato, cover and simmer for 20 minutes until tender.
  5. Step 5. Stir the washed morogo or spinach through and cook for 5 minutes more.
  6. Step 6. Season with black pepper and serve with pap, samp or brown rice.
