Method

  1. Step 1. Soften the onion in the oil for 6 minutes, then add the garlic, cumin and curry powder.
  2. Step 2. Add the sweet potato, tomatoes, chickpeas and stock, cover and simmer for 20–25 minutes until tender.
  3. Step 3. Wash the spinach thoroughly, stir it in and cook for 3 minutes until wilted.
  4. Step 4. Finish with lemon juice, which helps the body absorb the iron from the beans and greens.
