Method

  1. Step 1. Mix the flour and baking powder in a bowl, then beat in the eggs and milk to a thick batter.
  2. Step 2. Stir through the corn, chopped spinach and spring onion and season with black pepper.
  3. Step 3. Heat a little oil in a non-stick pan over medium heat.
  4. Step 4. Cook heaped spoonfuls for 3 minutes a side until golden and set right through — the middle should not be wet.
  5. Step 5. Drain on kitchen paper and serve with lemon and plain yoghurt.
