Method

  1. Step 1. Brown the beef in the oil in batches, then set aside.
  2. Step 2. Cook the onions slowly for 15 minutes until very soft, then add the garlic for a minute.
  3. Step 3. Stir in the tomatoes, tomato paste, stock and thyme, return the beef, cover and simmer gently for 75 minutes.
  4. Step 4. Add the carrots and potato and cook for a further 30 minutes until the beef pulls apart easily.
  5. Step 5. Check the meat is thoroughly cooked with no pink remaining, season with black pepper and serve with rice or pap.
