Trinchado-style beef with peppers

Trinchado, a Portuguese-influenced dish widely eaten in South Africa, is usually cubed beef in a rich sauce. This version leaves out the wine, uses lean beef and adds peppers and onion.

Method

  1. Step 1. Brown the beef in the oil in batches, then set aside.
  2. Step 2. Cook the onions for 8 minutes, add the garlic, peppers, paprika and bay leaf and cook for 5 minutes.
  3. Step 3. Return the beef with the tomatoes and stock, cover and simmer for 40–45 minutes until tender.
  4. Step 4. Uncover for the last 10 minutes so the sauce reduces and darkens.
  5. Step 5. Check the beef is cooked right through, season with pepper and serve with bread rolls.
