Umphokoqo with maas and tomato salad

Umphokoqo (also called uphuthu) is dry, crumbly maize meal, most often eaten with cold amasi. It is especially associated with Xhosa and Zulu home cooking. A tomato and onion salad on the side adds vegetables and vitamin C.

Method

  1. Step 1. Bring the salted water to the boil in a heavy pot.
  2. Step 2. Tip in the maize meal all at once without stirring, cover and steam on a low heat for 15 minutes.
  3. Step 3. Break the mixture up with a fork so it becomes dry and crumbly, cover again and steam for another 10–15 minutes, forking it through once more.
  4. Step 4. Mix the tomato, onion, green pepper and lemon juice for the salad.
  5. Step 5. Serve the umphokoqo in bowls with cold amasi poured over and the salad on the side.
