Method

  1. Step 1. Heat the olive oil in a frying pan and add the chickpeas and cumin, cooking for 5 minutes until warmed through.
  2. Step 2. In a separate dry pan, griddle the halloumi slices for 2 minutes each side until golden.
  3. Step 3. Warm the flatbreads briefly in a dry pan.
  4. Step 4. Spread each flatbread with yoghurt, then top with washed salad leaves, spiced chickpeas and halloumi.
  5. Step 5. Fold and serve warm.
