Method
- Step 1. Preheat the oven to 200°C (fan 180°C).
- Step 2. Prick the potatoes several times with a fork and bake for around 60 minutes until the skins are crisp and the centres are soft.
- Step 3. Meanwhile, warm the baked beans in a small saucepan until piping hot.
- Step 4. Cut a cross in the top of each potato and squeeze gently to open.
- Step 5. Top with cottage cheese and hot baked beans, scatter over the chives and season with black pepper.
