Method
- Step 1. Whisk the eggs with the milk and season with pepper.
- Step 2. Heat the oil in an ovenproof frying pan and wilt the spinach.
- Step 3. Add the peas and tomatoes and stir briefly.
- Step 4. Pour in the egg mixture and cook over a low heat for 5 minutes until the base is set.
- Step 5. Finish under a hot grill for 3–4 minutes until the egg is fully set and piping hot with no runny egg remaining.
- Step 6. Slice and serve while hot.
