Method

  1. Step 1. Whisk the eggs with the milk and season with pepper.
  2. Step 2. Heat the oil in an ovenproof frying pan and wilt the spinach.
  3. Step 3. Add the peas and tomatoes and stir briefly.
  4. Step 4. Pour in the egg mixture and cook over a low heat for 5 minutes until the base is set.
  5. Step 5. Finish under a hot grill for 3–4 minutes until the egg is fully set and piping hot with no runny egg remaining.
  6. Step 6. Slice and serve while hot.
