Method

  1. Step 1. Preheat the grill to medium-high.
  2. Step 2. Grill the mackerel fillets for 4–5 minutes each side until opaque and cooked through.
  3. Step 3. Meanwhile, combine the butter beans, tomatoes, cucumber and red onion in a bowl.
  4. Step 4. Dress the salad with olive oil, lemon juice and parsley.
  5. Step 5. Check the mackerel is piping hot and flakes easily before serving.
  6. Step 6. Serve the mackerel on top of the salad.
