Method

  1. Step 1. Heat the oil in a large pan and fry the onion for 5 minutes until soft.
  2. Step 2. Add the garlic and herbs and cook for 1 minute.
  3. Step 3. Stir in the tomatoes and stock and bring to a simmer.
  4. Step 4. Cook for 15 minutes, then stir in the beans.
  5. Step 5. Simmer for a further 5 minutes until the beans are heated through.
  6. Step 6. Blend part of the soup for a thicker texture if you like, then season to taste.
  7. Step 7. Cool any portions for storage before refrigerating or freezing.
  8. Step 8. Reheat until piping hot throughout before serving.
