Method
- Step 1. Heat the oil in a large pan and fry the onion for 5 minutes until soft.
- Step 2. Add the garlic and herbs and cook for 1 minute.
- Step 3. Stir in the tomatoes and stock and bring to a simmer.
- Step 4. Cook for 15 minutes, then stir in the beans.
- Step 5. Simmer for a further 5 minutes until the beans are heated through.
- Step 6. Blend part of the soup for a thicker texture if you like, then season to taste.
- Step 7. Cool any portions for storage before refrigerating or freezing.
- Step 8. Reheat until piping hot throughout before serving.
