Method

  1. Step 1. Preheat the oven to 200°C (180°C fan).
  2. Step 2. Heat the oil in an ovenproof dish on the hob and fry the garlic for 1 minute.
  3. Step 3. Stir in the chopped tomatoes and butter beans and simmer for 5 minutes.
  4. Step 4. Nestle the cod fillets into the sauce and season lightly.
  5. Step 5. Transfer to the oven and bake for 15–18 minutes until the fish is opaque and flakes easily.
  6. Step 6. Scatter with parsley and serve piping hot with crusty bread.
