Method
- Step 1. Mash the bananas in a bowl until smooth.
- Step 2. Whisk in the eggs, then stir in the oats and cinnamon until combined.
- Step 3. Heat a little oil in a non-stick frying pan over a medium heat.
- Step 4. Spoon small rounds of the batter into the pan and cook for 2–3 minutes on each side until golden and cooked through.
- Step 5. Repeat with the remaining batter, adding more oil as needed.
- Step 6. Check the centre of a pancake is cooked through with no raw batter before serving.
