Method

  1. Step 1. Heat the oil in a large pan and fry the onion for 5 minutes until soft.
  2. Step 2. Add the garlic, ginger and curry powder and cook for 1 minute, stirring.
  3. Step 3. Add the chicken and cook until sealed on all sides.
  4. Step 4. Stir in the tomatoes and coconut milk and bring to a simmer.
  5. Step 5. Cover and simmer for 20 minutes, stirring occasionally, until the chicken is cooked through with no pink meat.
  6. Step 6. Add the frozen vegetables and cook for a further 5 minutes.
  7. Step 7. Check everything is piping hot before seasoning to taste.
  8. Step 8. Cool quickly, portion and freeze; defrost fully and reheat until piping hot before serving with rice.
