Method

  1. Step 1. Slice the chicken breast and toss with olive oil and cumin.
  2. Step 2. Heat a griddle pan or frying pan over a medium-high heat.
  3. Step 3. Cook the chicken for 6–8 minutes, turning regularly, until it is piping hot throughout with no pink meat and juices run clear.
  4. Step 4. Warm the flatbreads briefly in a dry pan.
  5. Step 5. Spread each flatbread with hummus, then add washed salad leaves and the cooked chicken.
  6. Step 6. Drizzle with natural yoghurt, fold and serve immediately.
