Method
- Step 1. Slice the chicken breast and toss with olive oil and cumin.
- Step 2. Heat a griddle pan or frying pan over a medium-high heat.
- Step 3. Cook the chicken for 6–8 minutes, turning regularly, until it is piping hot throughout with no pink meat and juices run clear.
- Step 4. Warm the flatbreads briefly in a dry pan.
- Step 5. Spread each flatbread with hummus, then add washed salad leaves and the cooked chicken.
- Step 6. Drizzle with natural yoghurt, fold and serve immediately.
