Method

  1. Step 1. Heat the oil in a large pan and fry the onion, carrots and celery for 5–6 minutes until softened.
  2. Step 2. Add the courgette, tomatoes, stock and herbs, then bring to a simmer.
  3. Step 3. Cook for 15 minutes until the vegetables are tender.
  4. Step 4. Stir in the beans and pasta and cook for a further 8–10 minutes until the pasta is just tender.
  5. Step 5. Season to taste.
  6. Step 6. Cool any portions for storage before covering and refrigerating or freezing (add pasta fresh if freezing for best texture).
  7. Step 7. Reheat gently until piping hot throughout, adding a splash of water if it's thickened too much.
  8. Step 8. Serve with grated cheese if using.
