Method
- Step 1. Heat the oil in a large pan and fry the onion, carrots and celery for 5–6 minutes until softened.
- Step 2. Add the courgette, tomatoes, stock and herbs, then bring to a simmer.
- Step 3. Cook for 15 minutes until the vegetables are tender.
- Step 4. Stir in the beans and pasta and cook for a further 8–10 minutes until the pasta is just tender.
- Step 5. Season to taste.
- Step 6. Cool any portions for storage before covering and refrigerating or freezing (add pasta fresh if freezing for best texture).
- Step 7. Reheat gently until piping hot throughout, adding a splash of water if it's thickened too much.
- Step 8. Serve with grated cheese if using.
