Method
- Step 1. Heat the oil in a large pan and fry the onion and carrots for 6 minutes until softened.
- Step 2. Add the garlic and paprika and cook for 1 minute.
- Step 3. Stir in the beans, tomatoes and stock.
- Step 4. Bring to the boil, then reduce the heat and simmer for 20–25 minutes until thickened.
- Step 5. Season to taste.
- Step 6. Cool quickly, then divide into portions to refrigerate or freeze.
- Step 7. Reheat until piping hot throughout before serving.
