Method
- Step 1. Heat the oil in a large pan and fry the onion for 5 minutes until soft.
- Step 2. Add the garlic, ginger and coriander and cook for 1 minute.
- Step 3. Add the squash and stock, bring to the boil, then simmer for 20–25 minutes until the squash is soft.
- Step 4. Blend until smooth.
- Step 5. Stir in the coconut milk and warm through gently.
- Step 6. Season to taste.
- Step 7. Cool, portion and store or freeze as needed.
- Step 8. Reheat thoroughly until piping hot before serving.
