Method

  1. Step 1. Heat the olive oil in a non-stick pan over a medium heat.
  2. Step 2. Wash the spinach thoroughly and add to the pan, cooking until wilted.
  3. Step 3. Beat the eggs in a bowl and season with black pepper.
  4. Step 4. Pour the eggs over the spinach and tilt the pan to spread evenly.
  5. Step 5. Cook for 2–3 minutes until the base is set, then scatter over the cheese.
  6. Step 6. Fold the omelette in half and cook for a further 1–2 minutes until fully set with no runny egg remaining.
  7. Step 7. Serve immediately while piping hot.
